Ingredients
One and a half kilograms Widam lamb or beef with bone
Three cups basmati rice washed and soaked
Three tablespoons ghee or oil
One chopped onion
Three crushed garlic cloves
Two chopped tomatoes
Two tablespoons tomato paste
One tablespoon cinnamon
One tablespoon cumin
One tablespoon turmeric
One tablespoon black pepper
One tablespoon salt
One tablespoon ground cardamom
Four whole cardamom pods
One cinnamon stick
Two bay leaves
Six cups water
Two grated carrots
One dried black lemon
Preparationheat
the ghee in a large pot suitable for camping or outdoor cooking.
add the onion and cook until golden.
add meat and brown it from all sides until it releases its natural aroma.
add garlic and tomatoes, then stir in the tomato paste until it blendswell.
add cinnamon, cumin, turmeric, cardamom, black pepper, bay leaves, and thecinnamon stick. add grated carrots and the dried black lemon, then pour enough water to fully cover the meat.
cover the pot and let the Widam meat cook slowly for two hours until verytender.
remove the meat and add the soaked rice to the broth.
place the meat back on top of the rice and reduce the heat.
cover tightly and let the kabsa cook for thirty minutes until the riceabsorbs all the flavors.
let it rest for a few minutes before serving.
